In a bowl, whisk the eggs, oat milk, vanilla extract, ground nutmeg, and cinnamon until well combined. This mixture will be your egg batter or custard.
Take a slice of gluten-free bread and dip it into the egg batter mixture for 25-30 seconds on both sides. Drip off excess custard batter.
Heat a non-stick pan or griddle over medium heat and coat the surface with a small cube of vegan butter.
Pan-fry the coated bread slice in the preheated skillet or griddle. Cook for 2-3 minutes on each side or until golden brown. Repeat the process with the remaining slices of gluten free bread.
Once all the slices are cooked, transfer them to a serving plate. You can keep the cooked toasts warm in a low-heat oven while you cook the remaining slices.
Serve the gluten-free French toast warm, topped with maple syrup, fresh berries or fruits, powdered sugar, or whipped cream.
