How to use the vegan mirror glaze 

Before jumping into the recipe, let’s explore how to use it, and if your glaze doesn’t turn out smooth and shiny, there are a few steps to fix it.

  1. Warm the glaze to 35°C (95°F) on a double boiler before use. Be careful not to overheat it; it may melt your cake while glazing.
  2. Use a hand blender to smoothen the warm glaze. Make sure no air is incorporated while blending to prevent air bubbles from forming.
  3. Return the cake to the freezer if the first glaze isn’t good. Go back to steps 1 and 2, and then glaze again. You want to do this only once to prevent a thicker glaze.

Ingredients and Substitutes

  • Vegan white chocolate â€“ use a good dairy free white chocolate with at least 38% fat content, like Pascha or Valrhona Inspirations Chocolate. Check out the alternative in the table below.
  • Alpro whipping cream â€“ it’s an excellent alternative to a regular double cream. 
  • Powdered food colors â€“ use a good quality natural food color. This recipe uses Pavoni natural food coloring. Find the alternative in the substitution table below.
  • NH Pectin – a type of pectin that is temperature reversible.

Step By Step Instructions

STEP 1
  •  Mix pectin NH and sugar. Warm the cream, sugar, glucose, and water in a saucepan at 40°C (104°F). 
  • Add the mixed pectin and sugar to the warm cream, then boil it to 102°C (215 °F). Remove from heat.
STEP 2
  • Pour the hot liquid into the white chocolate and food color, then mix using the hand blender until smooth. 
  • Do not incorporate air to prevent air bubbles.
STEP 3
  • Transfer into a container, then cover the surface with cling wrap. 
  • The glaze is ready to use at 35-40°C (95-104°F). 
  • If it’s not needed yet, store it in the fridge and reheat it before use.
